You can pre-order "The Art Of Bolt" right now over at Amazon, it's filled with beautiful imagery and will be a prized possession I feel once Lasseter's reign as ruler of all Disney animation starts to gather steam.
I look forward to the release of each "Art Of" book during John's early stages here shoring up the Mouse's animation, "The Princess and the Frog," "Rapunzel," and "King of the Elves" will all be great examples of what happened to turn the soul of this company around...

I'm not asking this facetiously, but does it include any of the original Chris Sanders "American Dog" art?
It hasn't come out yet.
I haven't seen the book yet, but I'm willing to bet that there is practically no material from Chris Sanders in there. You will not see any of the characters from American Dog, and you will probably not see any of the other background pictures. This is the Art of Bolt, not the Art of the Film That Didn't Get Made (aka American Dog).
American Dog's concept art was a hell of a lot more interesting than anything from Bolt.
Too bad the story wasn't as well, Spokker...
